Made-from-Scratch Chocolate Sauce

This chocolate sauce is oh-so-easy and so much better than store-bought!  Use it on ice cream, to top desserts, in coffee; anything you can imagine!  It is particularly good topping ice cream on top of a Fudge Brownie!

8 ounces good-quality semi-sweet chocolate

1 cup heavy cream

1/2 cup light corn syrup

Combine the cream and corn syrup in a small heavy saucepan and bring to a simmer.  Pour the liquid over the chocolate in a bowl and allow it to sit for 3-4 minutes, or until the chocolate has melted.  Whisk to combine, then continue until the sauce is shiny and smooth.  Allow the sauce to cool slightly, then use or pour into a storage container.

This sauce keeps well in the refrigerator.  Let come to room temperature, or warm slightly, before using.
