Cheesy Popcorn

Bacon & cheese combine perfectly to take plain popcorn to a whole new level.  (Just cheese for the non-bacon folks!)  If you omit the bacon, a little smoked salt lends some smokiness (a little goes a long way, so use restraint).  To make it sweet & savory, mix with caramel corn, some mini-cookies, or dried fruit!

Equipment needed:  Popcorn Popper     Popcorn Bowl    Half-sheet Pans

3 Tablespoons bacon drippings or vegetable oil

1/2 cup popcorn kernels

3 ounces shredded Cheddar cheese

1 ounce Parmesan cheese

1/2 cup finely chopped, crisply cooked bacon

2 teaspoons kosher salt (replace 1/2 teaspoon with smoked salt if omitting bacon)

Preheat the oven to 350-degrees.

Combine the cheeses, bacon & salt in a small bowl, stirring well.

Pop the popcorn in the bacon drippings or oil. 

Pour the popcorn out onto 2 half-sheet pans.  Sprinkle half the cheese mixture over each and toss lightly.

Place the pans in the oven and bake for 5-6 minutes, or until the cheese melts.

Remove from the oven, toss with a spatula and pour into a large bow to serve.
