Fresh Plum Salsa

Plums may seem like an unusual base for a savory salsa, but they totally work in this delicious condiment.  The perfect accompaniment to Chicken Paillards or any kind of grilled or baked chicken or fish.  Honestly, it is tasty enough to eat with a spoon!

1 cup fresh plums, pitted and chopped

1 cup mango, peeled and chopped

1 cup red onion, minced

1 cup red bell pepper, seeded and chopped

1 large Jalapeno pepper, seeded and minced

1/4 cup chopped fresh cilantro

2 Tablespoons fresh lime juice

1/4 teaspoon lime zest (skin only, no white)

1 teaspoon red wine vinegar

1/4 teaspoon ground coriander

1/2 teaspoon salt

Combine all ingredients well.  Cover and refrigerate for several hours to allow the flavors to blend. It is best to allow the salsa to come to room temperature before serving.  Store in the refrigerator.
