This fabulous appetizer appeared at many of my catered events! Put it together a few hours or up to a day ahead of time, then put it out with toothpicks for serving-it doesn't get easier than this. This works on a cheese board, a tasty twist to the usual offerings. Easily doubled or tripled for big crowds!
2 Pound Fresh Mozzarella Cheese, cut in 1" cubes
4 Tablespoons fresh, chopped herbs of your choice (Rosemary leaves, Thyme leaves, Basil, Tarragon, Chives, Oregano, Parsley, Marjoram)
1 Teaspoon Red Pepper Flakes, crushed
1/2 Teaspoon Salt
2 Teaspoon Balsamic Vinegar
4 Tablespoons Extra Virgin Olive Oil
Combine all ingredients and marinate in the refrigerator for several hours or overnight to allow flavors to develop. Remove cheese from the refrigerator about an hour before serving to let it warm up a bit.
